Meet a girl just trying to survive college as a vegetarian triathlete


ITS FRIDAY!!! Good Friday actually.

I don’t know about you all, but I have been one tired girl this week and am really looking forward to this weekend. My dad is coming to pick me up from school this afternoon so I can spend Easter weekend with my family. I have always loved Easter, it is just such a happy time for me: music at church is always so upbeat, I get to spend time with the family, reminder that summer is right around the corner, and EASTER BRUNCH.

Since you are reading this blog, you are probably some sort of foodie/fitness nut like I am and any foodie that doesn’t get excited about Easter Brunch should probably consider finding a new hobby. But anyhow, since I am the foodie of the family, Mom asked me to look into some places to go for brunch. Rewind a bit: I moved during the summer of 2009, so we have only celebrated one Easter since, but we were in Jacksonville, FL during Easter last year. So, being the college student that I am, I put off doing my chemistry homework and searched for a restaurant my whole family would enjoy (prime rib for the Dad, seafood for me, chicken nuggets for the brother, etc.) and found this piece of loveliness. Now doesn’t look FABULOUS?! I’ve never been before, but I am really excited to check it out.

Now I wanted to share a few more things about myself. Since I am a college student living on campus, I don’t really get a great opportunity to cook and bake and come up with awesome and interesting creations in the kitchen while at school. Therefore, I probably won’t be detailing every thing I eat since it is relatively the same every day. However, I will definitely share my workout and school adventures.

Yesterday afternoon, I went on a BEAUTIFUL bike ride with two of my good friends. It felt so great to be back in the saddle, I hadn’t been on the bike in over a week! But man, my legs were definitely feeling it after. I took a nap when I got back to my dorm (of course after eating my other half of a peanut butter crunch clifbar and a mug of cereal). Then I went to dinner and had the usual salad full of spinach, green peppers, mushrooms, peas, tomatoes, carrots, hummus, and cottage cheese with balsamic vinegar. OH but the best part of the salad… they were serving steamed asparagus so I plopped a number of those babies right on top of that salad! DELICIOUS! I also had grilled veggies and tofu with brown rice and some terriyaki sauce mixed in with fruit for dessert!

I passed out last night while doing my chemistry lab write up… fail! I was really dissapointed because I fell asleep around 10 and I was supposed to go on adventure last night with some of my friends around 11. Total let down, but I am sure I will be joining them for Waffle House Thursdays next week! Not to worry friends.

I got up this morning and had a wonderful swim at 6:45 and just finished my breakfast. So now I am off to class!
