Guess who is chillin’ on her couch at home! Yep thats right. I am back home. Its so great to be here and hanging out with the family.

Also, I got my chemistry test back today… I am not doing as poorly as I thought I would be doing. I only have one more week!

I had a chocolate chip peanut crunch Clifbar (MY FAVORITE!) during chemistry and as soon as chemistry was over, I was ready for my ┬árunning date with one of my friends/training buddies. We ran about 50 minutes, neither of us timed it though. It was a little chilly but since I wore leggings and long sleeves, I warmed up really fast. The clouds were looking pretty heavy throughout the run, but luckily it didn’t start to drizzle until we were about halfway in. It felt really nice.

Post run, I took an amazingly fast shower and finished packing up to go home. I then enjoyed a lovely Athenos brand plain greek yogurt with Honey Roaster Honey Bunches of Oats. It was delicious. Unfortunately, I was hungry about 30 minutes later and had a 2 hour car ride ahead of me. Luckily I had brought the remainder of my homemade granola (which wasn’t much) to snack on in the car.

As soon as I got home I made scrambled eggs for my brother and myself. Now these weren’t your average everyday scrambled eggs. Why? BECAUSE I MIXED IN AVOCADOS! Avocados are my favorite vegetable and I usually end up eating 2 avocados when I come home on the weekends! Onions, green pepper, mushrooms, tomatoes, and avocado, probably one of the best creations known to man. You know, my favorite thing about scrambled eggs is putting tons of veggies in which reallyadds volume to the eggs. Accompanying the scrambled eggs was some cereal (cheerios, frosted miniwheats, multigrain puffins, french vanilla granola, and blueberries) along with a piece of toast, pineapple and strawberries, and corn. Obviously, today was clean out the fridge day at home.

HIP HIP HOORAY!

ITS FRIDAY!!! Good Friday actually.

I don’t know about you all, but I have been one tired girl this week and am really looking forward to this weekend. My dad is coming to pick me up from school this afternoon so I can spend Easter weekend with my family. I have always loved Easter, it is just such a happy time for me: music at church is always so upbeat, I get to spend time with the family, reminder that summer is right around the corner, and EASTER BRUNCH.

Since you are reading this blog, you are probably some sort of foodie/fitness nut like I am and any foodie that doesn’t get excited about Easter Brunch should probably consider finding a new hobby. But anyhow, since I am the foodie of the family, Mom asked me to look into some places to go for brunch. Rewind a bit: I moved during the summer of 2009, so we have only celebrated one Easter since, but we were in Jacksonville, FL during Easter last year. So, being the college student that I am, I put off doing my chemistry homework and searched for a restaurant my whole family would enjoy (prime rib for the Dad, seafood for me, chicken nuggets for the brother, etc.) and found this piece of loveliness. Now doesn’t look FABULOUS?! I’ve never been before, but I am really excited to check it out.

Now I wanted to share a few more things about myself. Since I am a college student living on campus, I don’t really get a great opportunity to cook and bake and come up with awesome and interesting creations in the kitchen while at school. Therefore, I probably won’t be detailing every thing I eat since it is relatively the same every day. However, I will definitely share my workout and school adventures.

Yesterday afternoon, I went on a BEAUTIFUL bike ride with two of my good friends. It felt so great to be back in the saddle, I hadn’t been on the bike in over a week! But man, my legs were definitely feeling it after. I took a nap when I got back to my dorm (of course after eating my other half of a peanut butter crunch clifbar and a mug of cereal). Then I went to dinner and had the usual salad full of spinach, green peppers, mushrooms, peas, tomatoes, carrots, hummus, and cottage cheese with balsamic vinegar. OH but the best part of the salad… they were serving steamed asparagus so I plopped a number of those babies right on top of that salad! DELICIOUS! I also had grilled veggies and tofu with brown rice and some terriyaki sauce mixed in with fruit for dessert!

I passed out last night while doing my chemistry lab write up… fail! I was really dissapointed because I fell asleep around 10 and I was supposed to go on adventure last night with some of my friends around 11. Total let down, but I am sure I will be joining them for Waffle House Thursdays next week! Not to worry friends.

I got up this morning and had a wonderful swim at 6:45 and just finished my breakfast. So now I am off to class!
